Position Summary

The Camps & Nutrition Supervisor is responsible for overseeing all food services, staff accommodation, housekeeping, hygiene, and campsite support services across Coutada 5. The position ensures that all meals are nutritionally balanced, fully aligned with the organization’s 100% plant-based philosophy, and delivered efficiently within approved budgets. In addition, the incumbent will oversee accommodation standards, campsite cleanliness, organic food production, and the welfare of staff living in remote field camps. This is a multidisciplinary leadership role requiring strong operational management, hospitality, nutrition, logistics, inventory management, and people supervision skills.

Key Responsibilities

Food Services & Nutrition

Ensure full compliance with the organization’s 100% plant-based food philosophy across all camps and operational sites.
Plan, supervise, and continuously improve nutritious menus that provide balanced macro- and micronutrient intake.
Ensure meals are prepared and served according to established schedules.
Maintain high food quality while minimizing waste.
Adjust menus based on operational needs, seasonal availability, and staff feedback in consultation with nutrition specialists.
Deliver meals within approved daily food budgets.
Design and supervise the preparation of nutritionally balanced field rations for extended patrols.
Ensure remote ranger posts receive adequate food supplies to sustain operational readiness.
Continuously improve field ration composition based on operational feedback.

Food Stores & Inventory Management

Supervise food storage facilities and maintain strict food safety standards.
Ensure proper cold chain management during storage and transportation.
Maintain accurate inventory records.
Conduct mandatory weekly and monthly stocktakes.
Forecast food requirements and initiate procurement requests proactively.
Work closely with Procurement and Logistics to source diverse, high-quality ingredients.

Organic Gardens

Lead the development and expansion of organic vegetable gardens supporting camp food production.
Promote sustainable agricultural practices.
Introduce new vegetables, herbs, and crops that improve menu diversity.
Ensure compliance with organic farming principles.

Accommodation & Camp Infrastructure

Ensure staff accommodation remains safe, clean, functional, and comfortable.
Serve as the focal point for accommodation-related concerns.
Coordinate corrective actions with Infrastructure and Operations teams.
Conduct routine inspections to identify maintenance requirements.

Housekeeping, Hygiene & Grounds Maintenance

Supervise cleaning personnel responsible for communal facilities.
Ensure high standards of cleanliness across accommodation, offices, kitchens, dining areas, ablution facilities, and communal spaces.
Monitor housekeeping standards in facilities without dedicated cleaners.
Coordinate groundskeeping activities to maintain a clean, professional working environment.
Promote good hygiene practices throughout the camp.

Leadership & Team Management

Supervise cooks, cleaners, groundskeepers, and other Camps & Nutrition personnel.
Foster a positive, respectful, and performance-oriented working environment.
Support staff development through coaching and regular feedback.
Ensure compliance with organizational policies, procedures, and the Code of Conduct.
Participate in biannual staff performance reviews.
Manage the departmental budget responsibly and prepare operational and expenditure reports when required.

Minimum Qualifications & Experience

Education

Diploma or Degree in Hospitality Management, Culinary Arts, Nutrition, Hotel Management, or a related field.

Experience

Minimum three (3) years of supervisory experience in remote camps, hospitality operations, commercial kitchens, lodges, or similar environments.
Demonstrated experience managing food services, accommodation, and multidisciplinary support teams.

Technical Knowledge

Sound understanding of:
Nutrition principles
Large-scale meal planning
Food safety and hygiene
HACCP principles (advantageous)
Inventory management
Budget management
Organic gardening and sustainable agriculture

Languages

Excellent spoken and written Portuguese.
Working knowledge of English.
Knowledge of local languages (Ndau, Sena, Chitswa, or others) is considered an advantage.

Computer Skills

Basic proficiency in Microsoft Office and electronic inventory systems.
